As I said last month, when the sun returns, the remaining winter garden will go wild. It has. This is the garden on March 3rd.
There has been no more snow, only cold nights so the gamble to remove the hoop houses early has paid off.
Reese said he could use one quart of greens every week so I set myself a goal of canning 52 quarts for him. I fill all of my baskets and then begin washing, removing stems, chopping, blanching, and canning. Green leaves wilt down when blanched. These baskets filled just six quart jars.
Everything is about to go to seed and it is a rush against time to get things picked before the flavor deteriorates. My priority has been harvesting instead of planting which is backward for this time of the year. It has made me about three to four weeks behind in starting new seedlings. It is hard to get motivated to plant when you are busy harvesting. Is there ever going to be a normal year in the garden?
Today, the garden looks quite different. Some areas still have the winter vegetables while other beds have been stripped, amended, seeded, and tiny sprouts are appearing.
In the shady back of the garden, we will continue to fill in the two side aisles with manure. That will make a single center path which will give us a bit more planting area, and standardize the row lengths so the hoop houses can be rotated. I am already thinking ahead to next year.
The weather is warm and it feels like spring is here. I love it!
Those are some amazing looking greens! I've also been doing a good bit of canning, but mostly dried beans and some broth. I expect Reese will appreciate all your hard work, as well as all you shared your greens with. Here's hoping for a good garden year!
ReplyDeleteReese has learned to can and he KNOWS how much work is involved. He also has felt the money savings and has tasted the quality difference. All of my guys appreciate my hard work which makes it all worthwhile.
DeleteI followed your advice and canned lentils and then made burger patties. We love them. Bill prefers them reheated in the air fryer so they get crispy. Thanks for the idea.
I was really surprised the first time I canned garbanzo beans, how much better my hummus was. I'm glad you're having good outcomes with your canning. I wanted to let you know I just saw the first hummingbird on our feeders. I wasn't fast enough to grab a photo, but am hoping to soon.
DeleteA hummingbird already! That is early! If they are at your place, they can't be far from mine. I will be putting my feeders up today before they start buzzing my kitchen window staring at me with hungry eyes. Thanks for letting me know.
DeleteI put the feeder up and within an hour I had a hummingbird show up. It had to be watching and waiting for me because it arrived so quickly.

ReplyDeleteFresh greens... drool. I finally gave in and bought a bunch of kale at Walmart. Hope to plant some next week...after our NEXT batch of snow.
ReplyDeleteI have procrastinated too long. The kale and collared greens have become bitter. I tasted and spit out over 15 beautiful plants yesterday. Ugh. I kept thinking surely one would be fine but alas, they all changed in unison. At least the Swiss Chard, spinach and lettuce hasn't failed me yet. I got busy planting seeds too.
